lemon tartes (Pasteis de Nata)
Ingredients:
1 Package of puff pastry
3 eggyolks
2 table spoons corn starch
1 table spoon freshly grated lemon zest
1 large pinch of nutmeg
100g granulated sugar (best: homemade vanilla sugar)
250ml cream
125ml milk (or soyamilk)
Icing sugar
Mix 3 eggyolks, corn starch, lemon zest, nutmeg and
granulated sugar together in a pot. You can also use homemade vanilla sugar or
90g granulated sugar and 20g vanilla sugar or vanilla aroma. Add cream and milk
and whisk together before putting it on low heat. Stir your mix while heating
up carefully until it thickens and becomes creamy. Eventually cover with cling
film and put aside.
Roll out your puff pastry and cut out circles with approx.
7cm diameter, it will depend on your chosen form. One roll of puff pastry is
enough for 16 tartes in a common muffin form. Butter your muffin form and coat
with a layer of icing sugar. Place your puff pastry and fill with approx. 1-2
table spoons cream filling. Cover with icing sugar, so your pastry caramelizes
both from the outside and the top. Finally place for 17 - 22 Minutes at 175°C
warm air in your oven until golden brown. Let them cool down and enjoy.
